Instructions
Prepare the chicken
Pound chicken breasts to even thickness for uniform cooking.
Season and prepare breading stations
Season flour with salt and pepper. Mix breadcrumbs with Parmesan.
Bread the chicken
Dredge chicken in flour, dip in beaten egg, then coat with breadcrumb-Parmesan mixture.
Fry the chicken
Fry breaded chicken in olive oil until golden brown on both sides.
Prepare the sauce
Sauté garlic in olive oil, add tomato sauce and dried basil, simmer briefly.
Assemble and bake
Place fried chicken in baking dish, top with sauce and mozzarella, bake until cheese melts.
