Instructions
Prep oven and ingredients
Preheat oven to 180°C. Line a baking sheet with parchment paper.
Cream butter and sugars
In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
Add egg and vanilla
Beat in the egg and vanilla extract until fully combined.
Mix dry ingredients
In a separate bowl, whisk together flour, baking soda, and salt.
Combine wet and dry
Gradually add dry ingredients to the wet mixture and mix until just combined.
Fold in chocolate and Biscoff
Gently fold in white chocolate chips and Biscoff cookie butter until evenly distributed.
Scoop dough
Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them 5 cm apart.
Bake cookies
Bake in the preheated oven for 10-12 minutes until edges are golden brown.
Cool cookies
Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
