Boil lemon scraps

Boil the lemon scraps in water for 15 minutes to soften and reduce bitterness.

Mix wet ingredients

Mix the boiled lemon scraps with sugar and olive oil. Add eggs or egg + lemon juice if making chewy version.

Add dry ingredients

Add flour, baking powder and salt to the mixture and stir until a dough forms.

Shape cookies

Form small cookies from the dough and roll each in icing sugar.

Place cookies on a baking sheet and bake at 180°C until golden, 15-20 minutes.
