500 g

Filling

feta cheese (crumbled)

300 g

eggs (room_temperature)

5 pcs

yogurt (plain)

400 g

1 pcs

75 ml

Instructions

1

Prepare egg-yogurt mixture

Crack the eggs into a deep bowl and whisk well with a fork or wire whisk. Add the yogurt and baking powder, then mix until smooth.

3 min
2

Crumble the cheese

Crumble the feta cheese separately into a bowl into large pieces. If it's very salty, crumble it coarser for even distribution.

2 min
3

Prepare fat mixture

Melt the butter and mix with olive oil to create an aromatic fat mixture for brushing the phyllo sheets.

2 min
4

Prepare baking dish and first layer

Grease the baking dish with some fat mixture. Take two phyllo sheets, brush lightly with the fat mixture, spread a few tablespoons of egg-yogurt mixture, and sprinkle with some crumbled cheese.

3 min
5

Roll the first phyllo roll

Roll the phyllo sheets into a tight roll from the shorter side to create thicker, juicier layers. Place the roll in the baking dish and shape it into a spiral.

3 min
6

Continue with remaining phyllo sheets

Repeat the process with the remaining phyllo sheets, arranging them around the first roll until the entire baking dish is filled.

Rest the banitsa
