Gooey Chocolate Chip Cookies

Instructions
Cream butter and sugars
Whisk together the melted butter, granulated sugar, and brown sugar until pale and fluffy.
Add eggs and vanilla
Whisk in the egg, egg yolk, and vanilla bean paste until smooth.
Sift dry ingredients
In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
Combine wet and dry
Add the flour mixture to the wet mixture in two batches, then mix together until smooth.
Add chocolate and chill
Add in around ¾ of the chocolate, then mix; cover and refrigerate for 30 minutes to 1 hour.
Preheat oven
Preheat the oven to 175°C.
Scoop dough
Scoop the dough into balls, then place on a lined baking sheet with some distance apart.
Bake first stage
Bake for 7-8 minutes, then remove from the oven and press the remaining chocolate chunks into the tops of the cookies.
Bake second stage
Bake for 5 to 7 minutes more, until the cookies are golden brown.
Cool and serve
Once out of the oven, let cool and serve.
