Prepare apples and cinnamon sugar

Slice apples thinly and mix sugar with cinnamon for coating.

Combine coconut milk, sugar, coconut oil and vanilla in a saucepan. Simmer until thick and golden.

Cut puff pastry into rectangles, place apple slices in the center, sprinkle with cinnamon sugar, fold and seal edges.
