Instructions
Marinate the chicken
Place chicken pieces in a large bowl and cover with buttermilk. Refrigerate for at least 1 hour or overnight for best results.
Prepare the seasoning mix
In a large bowl, combine flour with salt, black pepper, paprika, garlic powder, onion powder, dried thyme, and dried oregano.
Coat the chicken
Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece thoroughly in the seasoned flour mixture, pressing to adhere.
Heat the oil
Heat sunflower oil in a large pot or deep fryer to 175°C.
Fry the chicken
Carefully lower chicken pieces into hot oil. Fry in batches for 12-15 minutes until golden brown and internal temperature reaches 75°C.
Drain and rest
Remove chicken from oil and drain on paper towels. Let rest for 5 minutes before serving.
