Instructions
Prepare brioche bun dough
Activate the yeast and prepare the enriched dough for brioche buns.
First rise for brioche buns
Allow the dough to rise until doubled in size.
Shape and proof brioche buns
Divide dough into 8 portions, shape into buns, and allow to proof.
Bake brioche buns
Bake the buns until golden brown.
Cook bacon for jam
Cook bacon until crispy and reserve the fat.
Prepare bacon jam base
Sauté onions and garlic in bacon fat until caramelized.
Simmer bacon jam
Add remaining jam ingredients and simmer until thick and jammy.
Prepare burger sauce
Mix all burger sauce ingredients together.
Form and cook burger patties
Shape ground beef into 8 patties and cook to desired doneness.
Melt cheese on patties
Add cheese slices to hot patties and allow to melt.
Assemble cheeseburgers
Build burgers with sauce, patties, bacon, and bacon jam.
