Lemon Tart without Oven
Ingredients

butter (softened)

icing sugar

lemon juice

lemon zest

Lemon Curd
butter

sugar
100 g
egg yolk

lemon juice

Instructions
Prepare tart shell dough
Mix softened butter with icing sugar until creamy.
Add dry ingredients to dough
Add flour, salt, lemon juice and zest to the butter mixture and mix to form a soft dough.
Shape the tart shell
Press the dough evenly into a tart pan or pie dish to form the shell base.
Chill the tart shell
Place the tart shell in the refrigerator to chill for 20 minutes.
Prepare lemon curd base
In a heatproof bowl, combine butter, sugar and egg yolks.
Cook the lemon curd
Place the bowl over a pot of simmering water and stir constantly until the curd thickens.
Finish the lemon curd
Remove from heat and stir in lemon juice until smooth.
Assemble the tart
Pour the warm lemon curd into the chilled tart shell and smooth the surface.
Chill the finished tart
Refrigerate the assembled tart for at least 30 minutes until set.
Garnish and serve
Garnish with fresh mint leaves before serving.

Store covered in the refrigerator. The tart can be frozen without mint garnish for up to one month.
