Peel and slice potatoes
Peel the potatoes and cut them into slices that are not too thin and not too thick.
Position potato for cutting
Place a potato slice between two skewers or chopsticks, with one on each side.
Make vertical cuts
Make thin vertical cuts across the potato, stopping when the knife touches the skewers.
Make diagonal cuts
Flip the potato slice over and make thin diagonal cuts at a slight angle, again stopping at the skewers.
Fan out the potatoes
Gently fan out the potato slice to reveal the accordion pattern.
Dry and prepare tray
Pat the potatoes dry and place them on a lined baking tray.
Prepare seasoning and brush
Mix the oil, turmeric powder, red chilli powder, salt, and garlic powder. Brush generously over the potatoes, making sure the seasoning gets into the cuts.
