Season the prawns
Coat the prawns with garlic powder, paprika, salt, pepper and cornflour for a flavorful base.
Prepare aromatics and tomatoes
Mince the garlic and halve the cherry tomatoes while getting the sundried tomatoes ready.
Sear the prawns
Heat butter and olive oil in a large pan, then sear the seasoned prawns until pink and lightly golden.
Build the sauce base
Add garlic sundried tomatoes to the pan, sautéing until fragrant and tomatoes begin to soften.
Create the creamy sauce
Pour in the vegetable stock and single cream, then add paprika, chili flakes, and dried thyme. Bring to a gentle simmer.
Cook the pasta
Add the pasta directly to the sauce and cook, stirring frequently, until al dente and sauce has thickened. Approx 300ml liquid per 100g pasta
Finish and serve
Remove from heat, garnish with grated hard cheese and fresh parsley, then serve immediately while hot.

Storage
Best enjoyed fresh. Cream-based sauces don't freeze well and may separate when reheated.
