Instructions
Wash and prepare sweet potatoes
Wash and peel sweet potatoes. If the skin is nice, you can leave it on. Cut first into thick slices, then into fries about 1 cm thick.
Soak fries in ice water
Place fries in a bowl and cover with cold water with ice. Soak for 30-40 minutes to remove excess starch.
Dry and coat fries
Remove fries from water, thoroughly dry them. Mix oil with spices and starch, pour over fries and toss well to coat.
Bake sweet potato fries
Arrange fries on a baking sheet lined with parchment paper so they do not touch each other. Bake at 200°C with fan for 40 minutes, turning halfway.
Prepare dipping sauce
Mix mayonnaise and ketchup with chopped pickle and pickle juice.
Serve
Sprinkle baked fries with grated cheese and parsley. Serve immediately with dipping sauce.
