Boil the pasta
Bring a pot of salted water to a boil and cook the penne until al dente.

Melt the cheese
In a pan over low heat, melt the smoked cheddar with a splash of pasta water to create a creamy sauce.

Combine and serve
Drain the pasta, add it to the cheese sauce with peas, olive oil, salt and pepper. Toss until evenly coated and serve immediately.
