Instructions
Preheat oven
Preheat oven to 180°C and line baking sheet with parchment paper.
Cream butter and sugars
In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
Add egg and vanilla
Beat in the egg and vanilla extract until well combined.
Mix dry ingredients
In a separate bowl, whisk together flour, baking soda, and salt.
Combine wet and dry ingredients
Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Add chocolate chips
Fold in chocolate chips until evenly distributed throughout the dough.
Portion cookies
Scoop 2-tablespoon portions of dough onto the prepared baking sheet, spacing them 5cm apart.
Bake cookies
Bake for 10-12 minutes until edges are golden brown but centers are still soft.
Cool cookies
Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool for 3 more minutes.
Serve warm with ice cream
Place warm cookies over scoops of vanilla ice cream and serve immediately.
