Make the fresh pasta dough

Create a well in the flour and add egg yolks, oil and salt to form the pasta dough.

Knead and rest the dough

Knead the dough for 8-10 minutes until soft, then cover and rest in the fridge for 2 hours.

Roll and cut the pasta

Roll the dough through pasta roller, gradually reducing thickness, then cut into spaghetti.

Prepare boiling water

Place a large pot of salted water on to boil for the pasta.

Cook the sauce base

Sauté shallots, garlic and tomatoes, then add squash and spices.

Add prawns to sauce

Add raw prawns to the pan and cook until pink and cooked through.
