Strawberry Spinach Salad with Balsamic Dressing
A refreshing summer salad combining fresh strawberries, spinach, nuts, cheese, and a tangy balsamic vinaigrette. Perfect as a light lunch or side dish.

Fresh spinach leaves

Fresh strawberries

Red onion

Extra virgin olive oil
60 ml
Balsamic vinegar
45 ml
Honey

Instructions
Prepare the strawberries and onion
Wash and hull the strawberries, then slice them into quarters or halves depending on size. Thinly slice the red onion into half-moons. Place both in a bowl.
Prepare the toppings
Roughly chop the nuts if whole. Crumble the cheese into small pieces. Set aside.
Make the balsamic dressing
In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until emulsified and smooth.
Assemble and serve
In a large salad bowl, add spinach, prepared strawberries, red onion, nuts, and cheese. Drizzle with balsamic dressing and gently toss to combine. Serve immediately.
Storage
Best eaten fresh. If storing, keep dressing separate and add just before serving to prevent wilting.
Notes
• For vegan version: omit cheese or use vegan cheese alternative, replace honey with maple syrup.
