Prepare chicken

Cut chicken breast into bite-sized cubes. Season with salt and pepper.

Whisk egg in a bowl. Dip chicken pieces in egg, then coat with cornstarch.

Heat vegetable oil in a wok or deep pan. Fry chicken in batches until golden and crispy. Drain on paper towels.
