Instructions
Prepare the marinade
Clean and marinate the mutton with yogurt and spices.
Cook the mutton
Cook the marinated mutton until tender.
Parboil the rice
Cook the rice in plenty of water with whole spices until 70% done.
Layer and cook biryani
Layer the cooked mutton and rice, add herbs and ghee, then steam.
Rest and serve
Rest the biryani for 15 minutes before serving.
