Instructions
Cook quinoa
Rinse quinoa under cold water. Add to pot with 200ml water, bring to boil, then simmer covered for 12-15 minutes until water absorbed and quinoa fluffy.
Prepare vegetables
While quinoa cooks, dice cucumber, halve cherry tomatoes, finely chop red bell pepper and red onion, roughly chop parsley and mint.
Drain chickpeas
Drain and rinse canned chickpeas under cold water to remove excess sodium.
Make dressing
In bowl, whisk together juice of 2 lemons, olive oil, salt and pepper until emulsified.
Assemble salad
In large bowl, combine cooled quinoa, chopped vegetables, chickpeas, feta cheese, herbs. Pour dressing over and gently toss to combine. Serve immediately.
