Instructions
Season the chicken
Season the chicken breasts with salt, onion powder, smoked paprika, and garlic powder.
Cook the chicken
Heat olive oil in a pan and cook the seasoned chicken breasts until fully cooked through.
Prepare the honey BBQ sauce
Mix honey and sugar-free BBQ sauce together in a bowl.
Cook the pasta
Boil macaroni pasta in salted water according to package instructions until al dente.
Make the cheese sauce
In a pan, combine evaporated milk, light cream cheese, and chicken stock powder. Stir until smooth and heated through.
Add the grated cheese
Add grated light cheddar cheese to the sauce and stir until melted and smooth.
Combine pasta with cheese sauce
Drain the cooked pasta and mix it into the cheese sauce until evenly coated.
Add chicken and BBQ sauce
Slice or dice the cooked chicken and stir it into the mac and cheese along with the honey BBQ sauce mixture.
Serve hot
Serve immediately while hot, optionally garnished with extra cheese or herbs.
