Instructions
Prepare brown butter cookie dough
Brown the butter, let it cool slightly, then mix with sugars, eggs, and vanilla. Add dry ingredients and chocolate chips.
Preheat oven and prepare pan
Preheat oven to 175°C and line an 8x8 pan with parchment paper.
Make brownie batter
Melt butter with chocolate chips, whisk in olive oil and cocoa powder. Mix sugars, eggs, and vanilla separately, then combine and fold in flour.
Assemble brookies
Layer half the brownie batter, add cookie dough chunks, pour remaining brownie batter, top with more cookie dough and chocolate chunks.
Bake brookies
Bake for 30-40 minutes until edges are set and center is slightly soft. Toothpick should come out with moist crumbs.
Cool and slice
Cool completely before slicing for clean layers.
