Homemade Hot Dog Sandwich with Caramelized Onions and Melted Cheddar
Turkish-style beef hot dog with homemade milk buns
Juicy smoked beef sausages nestled in soft homemade milk buns with sweet caramelized onions, tangy pickles, and melted cheddar cheese.

Mayonnaise

Instructions
Prepare wet ingredients
Mix water, milk, yeast and eggs in a bowl. Water and milk should be lukewarm (35-40°C) for yeast activation.
Mix dry ingredients
In another bowl, mix flour, salt and sugar. Always add flour sifted.
Combine wet and dry ingredients
Gradually add dry ingredients to wet ingredients while mixing. After dough forms, add softened butter and knead on counter by slapping and folding.
First rise
Place dough in oiled bowl and let rise for 1 hour until doubled in size.
Shape the buns
Deflate dough, divide into 80g portions, shape into 10-12 cm long buns. Place on parchment-lined baking sheet, cover and rest for 20 minutes.
Bake the buns
Brush with egg yolk and bake at 180°C for 20 minutes until golden brown. Cool for at least 20 minutes after baking.
Prepare the sauce
Mix equal parts mayonnaise, mustard and ketchup. Add optional Tabasco, Worcestershire and lemon juice to taste.
Caramelize onions
Slice onions and cook slowly until golden and caramelized.
Cook sausages
Grill or pan-fry sausages until heated through and lightly charred.
Assemble sandwiches
Slice buns, spread sauce, add sausage, caramelized onions, pickles and cheddar cheese. Serve immediately.

Store assembled sandwiches wrapped. Buns can be frozen separately for up to 1 month.
