Healthy Butter Chicken
A lighter version of the classic Indian butter chicken, made with Greek yogurt and lean chicken breast for a macro-friendly twist on this beloved comfort dish.

Instructions
Prepare the chicken marinade
Mix Greek yogurt with half of the minced garlic, grated ginger, garam masala, turmeric, cumin, paprika, salt, and pepper. Add chicken pieces and coat thoroughly. Marinate for 30 minutes.
Cook the aromatics
Heat olive oil in a pan over medium heat. Add chopped onion and cook until soft and translucent. Add remaining garlic and ginger, cook for 1 minute until fragrant.
Add spices and tomato sauce
Add remaining garam masala, cumin, turmeric, and paprika to the pan. Stir for 30 seconds, then add tomato sauce. Cook for 2-3 minutes until sauce thickens slightly.
Cook the chicken
Add marinated chicken pieces to the pan along with any remaining marinade. Cook for 8-10 minutes until chicken is cooked through and sauce is bubbling.
Finish the sauce
Reduce heat to low. Stir in heavy cream and butter until fully incorporated and sauce is creamy. Simmer for 2-3 minutes. Season with salt and pepper to taste.
Serve
Serve hot with rice or naan bread. Garnish with fresh cilantro if desired.
Storage
Store in airtight container. Sauce may thicken when cold - add splash of water when reheating
