Instructions
Prepare spices and aromatics
Measure and prepare all whole and ground spices, mince ginger and garlic.
Brown the beef
Heat oil in a heavy pot and sear the beef pieces until browned on all sides.
Sauté onions and spices
Add sliced onions to the pot and cook until golden. Add ginger, garlic and all ground spices; fry until fragrant.
Add whole spices and simmer beef
Add bay leaves, cardamom, cinnamon and cloves. Pour in enough water to cover the beef and simmer until tender.
Rinse rice and lentils
Wash aromatic rice, lentils and mung dal until the water runs clear.
Cook the khichuri
Add rinsed rice and lentils to the pot with the beef. Add salt and enough water to cover everything by 2 cm. Bring to a boil, then simmer covered until rice and lentils are soft.
Finish with ghee and green chili
Stir in ghee, green chilies and fried onions. Adjust seasoning and let rest 5 minutes before serving.
