Avocado Mixture

medium avocado1 piece
hard-boiled eggs3 piece
plain greek yogurt or cottage cheese30 g
juice of half large lemon15 ml
dijon mustard15 g
fresh parsley, chopped15 g

shallot, chopped1 piece

Prepare ingredients

Cut avocado in half and remove the pit. Scoop out the flesh. Roughly chop the shallot and hard boiled eggs. Add everything to a cutting board.

Smash the mixture

Smash all the ingredients together using a masher, fork or the flat side of a kitchen knife until well combined.

Toast the bread

Toast the sourdough bread slice until golden.

Top the toasted bread with the smashed avocado and egg mixture. Optionally add crushed red chili flakes or favorite toppings. Serve immediately.
