Smashed Avocado Toast with Hard Boiled Eggs

Avocado Mixture
medium avocado

hard-boiled eggs

plain greek yogurt or cottage cheese
30 g
juice of half large lemon
15 ml
dijon mustard
15 g
fresh parsley, chopped (chopped)

fresh dill, chopped (chopped)
5 g
shallot, chopped (chopped)

red pepper flakes
0.5 tsp
salt
1 to taste
black pepper
1 to taste
Instructions
Prepare ingredients
Cut avocado in half and remove the pit. Scoop out the flesh. Roughly chop the shallot and hard boiled eggs. Add everything to a cutting board.
Smash the mixture
Smash all the ingredients together using a masher, fork or the flat side of a kitchen knife until well combined.
Toast the bread
Toast the sourdough bread slice until golden.
Assemble and serve
Top the toasted bread with the smashed avocado and egg mixture. Optionally add crushed red chili flakes or favorite toppings. Serve immediately.
Boil eggs (if not pre-boiled)
Place eggs in boiling water for 10 minutes for hard-boiled. Cool in ice water and peel.
