Street Style Chilli Garlic Noodles

Instructions
Prepare vegetables
Wash, peel and julienne carrot. Shred cabbage. Mince garlic and slice chili peppers and spring onions.
Cook noodles
Bring water to boil in a pot. Cook noodles according to package instructions until al dente. Drain and set aside.
Heat oil and aromatics
Heat sunflower oil in a wok or large pan over medium-high heat. Add minced garlic and sliced chili. Stir fry for 30 seconds until fragrant.
Add vegetables
Add julienned carrot and shredded cabbage to the wok. Stir fry for 2 minutes until vegetables are slightly softened but still crisp.
Combine noodles and sauce
Add cooked noodles to the wok. Pour in soy sauce and sesame oil. Season with salt and black pepper. Toss everything together for 1-2 minutes until noodles are well coated and heated through.
Garnish and serve
Turn off heat. Garnish with sliced spring onions. Serve immediately while hot.
