Instructions
Prepare ingredients
Slice the onion thinly, mince the garlic, and measure out all seasonings. Bring cream or coconut milk to room temperature.
Caramelize the onions
Heat butter and olive oil in a large skillet over medium heat. Add onions and cook, stirring occasionally, until golden and jammy, 15-20 minutes. Add a splash of water if they start sticking.
Cook the pasta
While onions are caramelizing, bring a large pot of salted water to a boil. Cook pasta until al dente, then drain, reserving 1 cup of pasta water.
Build the sauce
Add minced garlic and all seasonings to caramelized onions. Let bloom for 1 minute, then add chili crisp and sauté another minute. Pour in cream and simmer for 3-4 minutes. Stir in grated Parmesan until melted.
Combine pasta and sauce
Add cooked pasta to the sauce and toss to coat. Use reserved pasta water to loosen the sauce if needed until silky and well-coated.
Serve
Serve hot with an extra spoon of chili crisp on top and optional fresh parsley garnish.
